I stumbled across this article while working on another project. We were looking at the history of fermented foods (FYI, I have a pending Probiotic Cookbook coming out too!) and were trying to see how old bread was. It turns out that archeologists found some bread in a fire pit in Jordan that was 14,000 years old. Little charred bread crumbs were found in the pit. They were analyzed by a lab in England and determined to be an ancient type of breath made with grains and tubers.
